In desperate attempts to clean out the pantry, yes I'm still on the subject, and no I haven't given up, in fact I am doing quite well despite my forgetfulness to photograph my achievements, I've made a few treats. These toasted coconut shortbread cookies were pretty good. They've got a great toasted flavour and a nice snap to the shortbread. I need to remind myself though that rolling cookies in a hurry is NOT a good idea. However, YAY THE TWO BAGS OF COCONUT ARE GONE!
