It's a quick caesar salad with a mayo base. No need for any real emulsifying and egg yolks, perfect for someone like myself who doesn't carry salad dressings in the fridge but still loves a great caesar. This sauce tastes way better than the store bought stuff and is better for you I'm sure, in terms of preservatives and additives. (Not calories/fat by any stretch of the imagination.) A hard boiled egg, some crunchy bread toasted in butter and a healthy serving of romaine round out this lunch I must make again!
Lazy-man's Caesar Salad
Serves: 3-4

1 Tbsp lemon juice
2 cloves of garlic, minced/pureed
2.5 Tbsp mayo
1/4 tsp worchestire
salt and pepper
3-4 Tbsp olive oil
3-4 Tbsp parmesan cheese
Bread ends, I used a hard crunchy baguette
2 Tbsp butter
2 heads of romaine
4 hard boiled eggs, peeled and sliced
parmesan cheese for sprinkling
In a small bowl combine the lemon juice, garlic, mayo, worchestire and s&p. Mix together with a fork. Slowly emulsify the olive oil into the mayo mixture to make a creamy dressing. Stir in parmesan.
In a skillet heat butter until hot (but not to hot to burn the bread) add the bread (chopped into croutons) and stir while toasting. Remove from heat when browned and crunchy. Chop romaine into bite sized pieces, place in a large bowl. Dress the salad with caesar dressing. Plate and add one hard boiled egg to each, garnishing with parmesan cheese.
