Strawberry Vanilla Bean Jam

Hi there.


You know about me and jam right?
The way I'm obsessed with making it?
The way I feel guilty eating it?
The way my pantry is stoked to the top with jars of jam I don't eat?
The way I give it away like it's going out of style?
The way there are jars of jam in my cupboards I've never even tried?
Sad right?
Well even though there are approximately 297 jars of jam waiting to be consumed I made 4 types of strawberry jam the other weekend.

Help me.

While I've only tried two so far, I'm happy to report this is the best strawberry jam in existence.
Period.
And I don't even like strawberry jam.
(It has a funny taste once you cook it)

Strawberries + vanilla + plus minimal sweetening = match made in heaven.

I won't be sharing this one! 
Make your own!

Strawberry Vanilla Bean Jam
1 1/4lbs fresh strawberries, crushed
juice of one lemon
1 vanilla bean, scraped and split
1/2 pack pectin crystals
350 g (1 1/3 cups) sugar

Get your jars sterilized and ready to go.

Combine the strawberries, lemon juice and vanilla in a large saucepan.  
Gradually stir in pectin.
Bring to a full boil that can't be stirred down, over high heat, stirring constantly.

Add all sugar, bring to another strong boil.
Boil hard one minute, stirring constantly.
Remove from heat, skim if necessary.

Ladle into jars leaving 1/2 inch head space.
Process in boiling water, 10 minutes.  
(I do 5 minutes for the 1/2 cup jars)

  1. oh this sounds DELISH!! Where in the world would I find a vanilla bean?? i don't even know what a vanilla bean looks like... :)
